We like happy animals as we feel it produces much better meat so we buy free range pigs, which have had a natural feed and growth along with tender attention through out.
A personal favourite of ours is the tomahawk pork chop from the loin. We do try where we can to take things one step further and question the ways of production to make sure our customers are receiving the best product they require being produce in the best way possible. Which led us onto dry ageing certain cuts of pork to customer request, this has some incredible results. Naturally this breaks down the fibres in the meat to make a much more pleasant eating experience, as a side effect of this the skin is dried out and produces the most incredible crackling you will ever eat which will just peel off, great sign of good pork.
