RARE BREED LAMB & MUTTON

The finest lamb direct from British farmers

Being sustainable suppliers Lamb is at its best in spring and during this time we feel you really benefit from seasonal produce. Being a great meat to accompany many different dishes and can be used in a variety of ways we utilise every cut of lamb possible from the neck to the legs. The versatility of Lamb is endless, with a rich and deep flavour you can really enjoy. We source our Lamb locally here in Cheltenham and in Yorkshire producing a brilliant Lamb.

We have found that Dorset Lamb is a superb breed and is our staple choice because of its consistent fat content and tender meat, giving the customer the perfect meal. Along with Dorset we also favour the Herdwick breed with its delicious taste and great size is perfect for a Carvery and other bigger portioned meals.

One of our personal favourites is the Crown Tenderloins better known as Pencil Fillet’s its not your every day cut but really is something special; taken from underneath the saddle a finger shaped fillet with exquisite flavour and extreme tenderness and 100% lean served as is or wrapped in Prosciutto which take no cooking time at all; brilliant for a starter or with a few for a delicious main.

RARE BREEDS

Herdwick lamb

A domestic sheep native to the lake district of Cumbria, the name Herdwick is from the Old Norse Heydvyck; meaning sheep pasture. Though low in lambing capacity and perceived wool quality when compared to more common commercial breeds such as merino: they are prized for robust health, and their ability to live solely on forage. The Herdwick breed produces a fantastic taste and comes highly recommended.

Hebirdean lamb

A breed of small black sheep from Scotland, with a distinctive small triangle tail. They often have two pairs of horns with the occasional rarity of a three horned. Hebridean’s have black, coarse wool which fades to brown in the sun with no wool covering the face and legs. They are considerably smaller than most other breeds of sheep, fully grown ewes weighing only around 25kg, and rams slightly heavier, at around 40–50kg. This breed delivers a delicious eating experience and is one of our favourite.
